Care in the vineyard is matched in the winery with grapes being fermented slowly with extended grape skin contact. The winery works day and night, hand plunging the cap of skins back into the fermenting juice. The colour deepens, the perfume rises, and juice becomes wine, made fine and strong with tannins slowly extracted from the skins. The wine is matured in selected French barriques for 15 months , 15% of the oak being new. The wine is hand bottled with minimal filtration, ready to be enjoyed.
